Corn and Lima Bean Succotash
Pair familiar veggies with unfamiliar ones to help introduce them to kids. Not only will this help broaden their palate, but help your kiddos get important nutrients, like the potassium and fiber from lima beans and zucchini in this recipe
Serve this on the side, or all on its own for a filling dish. Try adding other vegetables you love like bell pepper, tomato, carrots, or sweet potato!

Ingredients
2 T olive oil (or vegetable oil)
1 c onion (chopped)
1 c zucchini (chopped)
1 1⁄2 c corn (see note below)
3⁄4 c peas (fresh or frozen)
1 c lima beans (see note below)
1 t garlic powder
salt and pepper to taste
Instructions
- In a medium pot, heat oil over medium heat. Add the onion and zucchini and cook until softened, about 5 minutes.
- Add the corn, peas, lima beans, salt and pepper. Cook for another 5 minutes to heat through. Taste for seasoning.
- Serve on the side of a burger, on the top of salad, or enjoy on its own!
Notes
You can use fresh, frozen, or canned (drained and rinsed) corn – fresh offers the most crisp kernels.
You can use lima beans that are frozen, canned (drained and rinsed), or prepared from dried.
